A spicy, fruity aperitif made in the Thuir region of southern France since 1889. Made using wild yellow gentian from Auvergne, this is a secret ingredient of many an American bartender.
Made by macerating gentian roots in neutral grape alcohol. this maceration is then double-distilled and blended with herbs and other botanicls that have also been macerated. This blend is then aged in well-seasoned casks for 18 months.
Bittersweet and complex, with floral and citrus notes. Flavours of syrupy, honey sweetness and an underlying bitterness and herbal complexity.
