Grapes have been cultivated in the area of Macul since 1564, when the king of Spain granted the Hacienda Macul to Juan Jufré, a Spanish “conquistador” However it wasn’t until 1856 when Luis Cousino purchased the 1000-acres Macul Estate which already had 54 acres planted with vines.
14 years later the winery was built, followed 2 years later by an underground cellar. In 1970, after the Chilean land reform and with an imminent threat of expropriation of the Cousiño Winery, Carlos Cousiño Subercaseaux along with his father takes on the task to keep the family legacy alive until this very day.
Finis Terrae is a clear reflection of the terroir of Valle del Maipo, expressed through the best selection of Cabernet Sauvignon and Merlot from Cousiño Macul. It is a blend created by hundreds of combinations to find the ideal balance of fruit, acidity, tannins, alcohol and French oak.
After a detailed hand-picked harvest in small crates of 10 kilos each, the bunches were selected and, later on, the berries, to ensure that only grape grains went into the barrel. It was macerated in cold 7°C (45°F) for one week and was afterwards inoculated with yeasts. Fermentation took place at a controlled temperature of 26°C – 27°C and lasted for approximately 10 days. Post fermentative maceration took around 2 weeks and then the wine was decanted into new barrels where it matured during 18 months.
Cherry red with crimson trims, our Finis Terrae 2011 has a complex aromatic expression, in which fruits and spices are mixed at the beginning, later evoking ripe fruit and wood. On the palate the spices are accentuated, accompanied by elegant tannins and a long finish.
