Grapes have been cultivated in the area of Macul since 1564, when the king of Spain granted the Hacienda Macul to Juan Jufré, a Spanish “conquistador” However it wasn’t until 1856 when Luis Cousino purchased the 1000-acres Macul Estate which already had 54 acres planted with vines.
14 years later the winery was built, followed 2 years later by an underground cellar. In 1970, after the Chilean land reform and with an imminent threat of expropriation of the Cousiño Winery, Carlos Cousiño Subercaseaux along with his father takes on the task to keep the family legacy alive until this very day.
Antiguas Reservas is the emblem wine of the vineyard, with over 80 years in its portfolio. Since its debut in 1927, it has always been a limited selection of the best Cabernet Sauvignon of Cousiño Macul’s vineyards. Along the years, we have maintained its classic style, combining the maturity of the New World, the elegance of the traditional wines and a structure that allows an adequate storage capacity.
After a careful manual harvest, elaboration of the wine began with seven days of cold maceration at 10 º C (50°F). Then the juice was fermented during 9 to 10 days at an average temperature of 26 º C (79 º F), using different strains of yeast. A 20 days post fermentative maceration allowed enhancing the flavours and bouquets, as well as smoothing the tannins. The wine matured in French oak barrels during twelve months to be subsequently clarified before bottling it.
With an intense ruby red colour, its bouquet is clear and fruity, with a perfect balance between fruit and French oak, where prunes, blackberries and spicy notes outstand. To the palate it is pleasant and with great presence of ripe red and black fruits; it presents medium acidity, rounded tannins and a long ending.
