The palate is dry, with plum and sour cherry. The mouthfeel is velvety and initially has notes of cocoa, but comes to resemble a stony minerality on the long finish. Details

The Waterkloof Estate was founded in 2004, ending Paul Boutinot’s persistent and uncompromising 10 year search for a vineyard site with the potential to produce truly fine wine with a defining sense of origin. Located on the south-facing slopes of Schapenberg Hill near Somerset in the Stellenbosch district of the Western Cape’s Coastal Region, Waterkloof shares its magnificent Atlantic views with free-roaming peacocks and other natural fauna and flora attracted to this haven. Certified by Demeter in 2015, their vineyards are of only a few in the Cape to boast official biodynamic approval and status. The estate has 56 hectares under vine and Tim Atkin’s Cape Classification currently ranks Waterkloof as 5th Growth level. With production around 165,000 bottles per year, Waterkloof make “honest wines” from their unique biodynamic coastal site. Respect for nature, traditional winemaking practices and minimal intervention are all key to their success.

Vineyards
Circumstance Syrah is grown on the windswept, low yielding slopes of Schapenberg Hill. Strong winds churn up the vineyards regularly. This allows for low production and intense flavours. The farm is about 5 kilometres from the ocean, and the Syrah vineyards are planted at a height of between 240 and 260 meters above sea level. The soils are of granite origin with medium size stones, helping with drainage, but they also have a very good ability to retain moisture. The 2010 vintage was cultivated under dry land conditions. The vineyards are 8 years of age. Production was approx 3 tons/ha.

Vinification
The grapes were fermented whole-bunch in open top wooden fermenters. Natural yeast was allowed to start and complete the fermentation process. The grapes were not destemmed and everything was fermented on the stems. Only sulphur was added and no other additions, such as tartaric acid or enzymes were allowed. Berries were punched down a maximum of two to three times per day. The wine was left on the skins for a total of 30 days before it was racked. To ensure that we extracted only the finest tannins, the skins were pressed gently with a basket press. It was then aged in new 600 liter barrels for 20 months before bottling. The wine received no fining to ensure that the character of the grapes are purely expressed in the wine
