The Château Capion estate is a 45 hectare vineyard with a unique terroir. 200 metres up the Terrasses du Larzac, the land around its château, winery and wine cellar extends over three broad geological zones, the soils underfoot changing from Montpellier sandstone and clay to limestone gravels and alluvial silts. These habitats, the biodiversity present all around, and the climatic variations at Capion are nuanced in wines that express, in their power and finesse, their provenance.
Harvested using mechanical and manual. First check on vine before picking. Vibrating destemmer and manual sorting table.
Vinivied in temperature-controlled stainless steel tanks. Maceration from 14 to 21 days, then racking and addition of the best juice from the press. Once malolactic fermentation is completed, the wine is filtered.
Aged in temperature-controlled stainless steel tanks.
Intense purple. Plum, fresh grapes, myrtle and violet notes on the nose. On the palate, black fruits take the lead, then come a multitude of spices as well as wild herbs and garrigue. This young, fresh, exceptionally well-balanced wine is ideal with grilled dishes, cheese and charcuterie, or braised poultry and most excellent when accompanied with pie.
