Details

Rancho Zabaco wines were born in Sonoma County's Dry Creek Valley, where Zinfandelgrapes have been grown for 150 years. The wines belong to the land, an expression of the place and the community of farmers and winemakers who dedicate their lives to making great wine.

Today, the Rancho Zabaco community extends throughout Sonoma County, starting in Dry Creek and continuing to the mountains above Sonoma Valley, where the famed Monte Rosso vineyard provides us with distinct grapes for our Monte Rosso and Toreador Zinfandel wines.

The history of Sonoma County finds its modern voice in the wines of Rancho Zabaco – an authentic expression of a special place and time.

Vineyards
Grapes for this wine are selected from premier Zinfandel growing areas in Sonoma County, including Dry Creek Valley. In these AVAs, warm temperatures and unique soils create ideal conditions to grow intensely flavoured Zinfandel grapes. The 2013 growing season began early in Sonoma County, with consistent warm, dry weather leading the way to an early harvest. The steady conditions resulted in excellent colour and flavour intensity.

Vinification
Zinfandel grapes were destemmed, but not crushed. This technique minimized the extraction of harsh, bitter tannins from grape skins and seeds, resulting in concentrated, fresh raspberry flavors in the finished wine. To enhance the extraction of color and flavor, the grapes were cold soaked for one day at 60°F, followed by four to six days of fermentation at a maximum temperature of 88°F. Five to seven days of skin contact contributed to a deep ruby color that visually hints at the ripe fruit flavors of the wine. After primary fermentation was complete, the wine underwent malolactic fermentation to soften the acids and tannins. The wine was aged on its lees to enhance the mouthfeel and then was filtered prior to bottling.
