Pazo das Bruxas is a wine that pays homages to the folklore and nature of Galicia, a land of immense forests inhabited by mystic and magical beings like the Galician witches who lived in old country houses (pazos) where they would connect with nature through dances and spells to obtain the best fruits from it. Just like the albariño stock that gives life to Pazo das Bruxas.
Pazo das Bruxas is mostly produced with grapes from the O’Rosal area in combination with grapes from Salnés, just two of the five sub-areas of Rías Baixas. Both are known for their markedly Atlantic climates which are influenced by their proximity to the ocean with mild winters and high precipitation. Spring comes early and that is when there is the highest risk of frosts, the further away from the coast a vineyard is. In the summer, the anticyclone situation of the Azores means precipitation is scarce or null and the temperatures are mild. Autumn is the rainiest season of the year.
The soil is sandy with great water drainage and granite rocks in the structure which prevent water retention. The Salnés area is colder than O’Rosal, which leads to slightly slower ripening and wines that are more acidic.
6 housrs of skin-contact after pressing. The wine undergoes fermentation in stainless steel tanks for 16 days at 15-16ºC. The wine sees no oak ageing.
Brilliant yellow with a greenish edge. Intensely aromatic with white floral, citrus and white peach notes. Accessible, sweet and hedonistic upon entry. Notable for its clean acidity, which carries through on the midpalate. Long and persistent on the finish.
An excellent aperitif. Good with raw, cooked or grilled seafood. Pairs perfectly with mild, white fish. Its lively palate strikes a perfect balance with soft goat cheeses.
