David Levin, renowned hotelier and restaurateur, started growing his own grapes in the Loire Valley, France in 1985 to produce his own private label wines for his luxury hotels and restaurants.
His numerous travels to Australia had introduced him to many advances in agriculture and viticulture that were not used in Europe. David Levin and his Australian Wife Lynne are committed to producing a world class Sauvignon Blanc in the Loire Valley.
The LEVIN Winery was shipped to France in its entirety from Australia together with a team of engineers who specialized in its design and assembly.
Adopting a philosophy of combining the best of traditional organic agriculture with the finest innovative winemaking techniques, LEVIN Wine is proudly based on French terroir, history and tradition giving a true expression of the Sauvignon Blanc grape in its original and traditional home – The Loire.
David Levin continues the tradition he started in 1971 with the opening of The Capital Hotel and Restaurant, an absolute commitment to quality and style, blending “The Best of Both Worlds” and setting LEVIN Wine apart from other Sauvignon Blanc producers in France.
Today Levin Wines produce a superb range of organic wines that have achieved an outstanding cachet of international awards and reviews.
LEVIN has 19 vineyards on two different types of terroirs. The sites are planted in the villages of Bourré, Choussy and Oisly, some 15 to 20 km apart, over about 18 hectares.
Our Bourré vineyards in the Vallée du Cher are planted on the region’s famed Tuffeau* limestone, mixed with a harmonious blend of loose and flinty clay, mica and sand. This ancient terroir brings body, texture and minerality to the wine.
LEVIN Wines is also certified organic in the winery and we take care to preserve our pristine fruit. Upon harvesting, the grapes are carefully and swiftly brought to the winery where they are de-skinned and chilled before entering the press. This preserves the aromatic profile and reduces oxidisation.
Our tanks are stainless steel and temperature controlled. We ferment at a lower temperature in sealed tanks, which helps prevent oxidative flavours from developing. These are key factors in preserving the aromatics that delivery exceptional wine.
Cold stabilisation and a long maturation period allows the development of the complex flavours leading to increased flavour.
Unlike many Sauvignon Blanc producers, we insist on at least two year’s bottle maturation before we will release the wine.
Appearance: Clear, bright with pale lemon reflections.
Nose: Aromas of pears and apples with hints of honeysuckle and fresh citrus.
Palate: Refreshingly light and dry with a crisp acidity, it shows fruity notes of fresh green apple, hints of honeydew and lemon with a beautifully round palate.
