Chamans is a Parker-rated vineyard that sits in the south facing foothills of the Montaigne Noire in the Minervois region of the Languedoc.
Isolated from other vineyards, we can pursue our own non-interventionist farming philosophy, based on organic and biodynamic principles. (EcoCert and Demeter certified).
Our symbol, the black sheep, is there to remind us the Languedoc is a region that offers the opportunity to make exciting wines if you don’t follow the crowd.
All wines are vinified, varietal by varietal, in French oak barrels, foudres and concrete tanks with minimal use of sulphur.
Having our own bottling line allows us the flexibility to bottle in harmony with the cycles of the moon and weather conditions, when the wine is stable.
All the vines are hand harvested and go through an additional hand selection process on a table de tri.
Cold maceration for the Carignan and destalked/crushed grapes for the Syrah/ Mourvèdre. Cool fermentation (under 20°c) for 4 weeks in small concrete tanks. Stored in tank after fermentation.
A racy wine with wild black fruits, blackcurrant and blackberries with a surprising finish! Vivacity and fine tannins make it a gastronomic wine to drink on hunting days and at happy tables.
