This rich bivarietal wine is elaborated after a 72-hour-maceration before fermentation at 12°C to enhance primary aromas. Afterwards, a co-fermentation of 60% Cabernet Franc and 40% Malbec is carried out for 30 days in concrete vats to attain a more stable color intensity improving as well the tannin-anthocyanin relation. We also seek with the co-fermentation to harmonize the spicy aromatic textures of the Cabernet Franc and the fruitiness of the Malbec. Indigenous yeast is used in the fermentation. 60% of the wine is aged in French oak casks of 1.000 litres each.
The nose shows very floral aromas and something balsamic without being herbal. The palate is vibrant with the combination of buttery tannins and great, almost citric acidity that makes you salivate.
