Details

The Waterkloof Estate was founded in 2004, ending Paul Boutinot’s persistent and uncompromising 10 year search for a vineyard site with the potential to produce truly fine wine with a defining sense of origin. Located on the south-facing slopes of Schapenberg Hill near Somerset in the Stellenbosch district of the Western Cape’s Coastal Region, Waterkloof shares its magnificent Atlantic views with free-roaming peacocks and other natural fauna and flora attracted to this haven. Certified by Demeter in 2015, their vineyards are of only a few in the Cape to boast official biodynamic approval and status. The estate has 56 hectares under vine and Tim Atkin’s Cape Classification currently ranks Waterkloof as 5th Growth level. With production around 165,000 bottles per year, Waterkloof make “honest wines” from their unique biodynamic coastal site. Respect for nature, traditional winemaking practices and minimal intervention are all key to their success.

The Waterkloof portfolio consists of: Waterkloof, Circumstance, Circle of Life, Seriously Cool and False Bay.

Vineyards
Vines are grown on sandstone soils with a high percentage of medium sized rock mixed with clay. This provides excellent water retention capabilities, with the stones providing good drainage. Vineyard practives are very intensive, with a lot of attention being given to pruning and excess shoots are suckered at least 3 times during growing season. Greenharvest is done at veraison. The vineyards received 1 supplementary irrigation due to a very dry spring/summer. Fruit is harvested by hand, yielding 8t/ha.

Vinification
Grapes are destemmed into stainless steel open top fermenters. Fermention kicks off on its own without the addition of cultivated yeast. When fermentation starts the skins are punched down twice a day. For the first few days delestage also takes place once a day. With the completion of fermentation, the wine is left on the skins for 14 days. After this period the wine is racked from the skins. The skins are lightly pressed with a bag press. All the press wine are blended back with the rest of the wine. All the wine goes through malo in barrel of which 60 % were new. It was racked from barrels after completion of malo. This was followed by a further 2 rackings of the wine during is time in barrel. The wine was matured in barrel for 16 months.
