Casa de Si is a company of friends who share a passion for family, friendship and exceptional Spanish wine. The company is led by Australian winemakers Sarah Morris and Iwo Jakimowicz. Sarah and Iwo (husband and wife) both studied viticulture and oenology at Curtin University, Western Australia and they each have global winemaking experience, focusing recently in Australia and Spain.
Casa de Si was established in 2011 and since then they have purchased a number of small vineyards in the Calatayud region of Spain. The region is famous for the hospitality of its people, its arid conditions and world class old-vine garnacha (grenache). Their vineyards are farmed 100% organic/biodynamic.
Casa de Si’s mission is to hand craft wines which are expressive of the vineyards and the region. They bottle their wines without fining or filtration as they believe that these processes take away aromas and flavours from the wine. They also believe a little sediment in the bottom of the bottle only creates a more authentic wine. All their wines are made without any of the usual additives used in commercial winemaking, apart from a small sulphur addition at bottling.

Naturally fermented in stainless steel. Aged in stainless steel with a small portion of oak blended-in at bottling.
Based on a traditional joven style, Pablito is a young juicy garnacha, fruit driven with great tannin and length. Bottled with minimal sulphur, not filtered or fined.
